The 2024 Winter Fancy Food show ran from January 21-23 and was held at the Las Vegas Convention Center. Hosted by the Specialty Food Association, eight graduate students and three professors from the University of Nevada Las Vegas (UNLV), William F. Harrah College of Hospitality were invited to attend. The Junior Trendspotters surveyed thousands of companies and products from around the world and reported on the top three culinary trends emerging in 2024.
"We appreciate the opportunity to partner with the Specialty Food Association in Las Vegas and it is a valuable learning experience to connect with the people and companies who contribute to the innovative trends that are happening in the industry today," said Joseph Lema, Ph.D., Professor, Doctoral Program Coordinator.
The most prominent trends at the 2024 Winter Fancy Food Show appeared across three main categories.

- Environmental Impact
- True to Culture
Healthy drink options like low-sugar energy drinks by Club Mate, TÖST Rosé Alcohol-free sparkling beverages, and Unity Wellness Co. organic drinks dominated the beverage category. While the unique and fun flavors of White Coffee Snickers, Twix, and M&Ms coffees stole the show.
The Junior Trendspotters encountered countless exhibitors that focused on sustainability, and environmental impact, including Burroughs Family Farms regenerative organic nut butters, Nutraberry seed powders, IBIDEN Bussan Co. Ltd. plant-based animal-free shrimp, and Hiddenfjord sustainably farmed salmon. All of which offer conscious shoppers eco-friendly ways to consume more protein without negatively impacting the environment.
The third most prominent trend saw producers showcasing products that celebrated authentic cultures and cuisines. The low-salt miso from Fukuroya Co., Ltd., Donika olive oil from Albania, and Caplansky’s Deli mustards all highlight regions and cuisines that have proud culinary traditions.
"It is exciting to network with industry professionals, share cutting-edge ideas, and to participate in recognizing trends to help inform our research in a real-life setting that is like no other considering the large scale and size of this unique event," said Yuze (Crystal) JI, Hospitality Doctoral Studies.
